Ingredients

1 c
rice apple fiber
3⁄4 c
whole-wheat flour
3⁄4 t
salt
1⁄4 c
brown sugar
1⁄2 t
baking soda
3⁄4 c
buttermilk
1
egg
1⁄4 c
vegetable oil
1⁄4 c
raisins and sunflower seeds (optional)

Instructions

Mix all ingredients. If desired, add raisins and sunflower seed. Fill buttered muffin pan 2/3 full. Bake at 425° for 20 minutes. Makes about 12 muffins.
